We do have University Computing place publisher domain information in EZ Proxy.  Usually by adding the publisher domain information, we can cover several journals at one time.  The publisher's name is not always added, it is left up to the discretion of the Computing Center how it is listed.  The same is true if an individual journal title domain has to be added.

Do a majority of other academic libraries put entries for every eJournal
publisher domain and publication title URL they subscribe to into their
EZproxy Configuration file? I have the proxy URL prefix added
automatically to our OpenURL. If the eJournal Publisher and URL are not
in the config file the patron will receive an error. It just seems like
there should be an easier way than an entry for each eJournal Title.

Most of my journals are purchase through EbscoNet.

A to Z index = EBSCO A-to-Z
Proxy = EZproxy 5.3
